Easy Lunch Idea…

My parents were here for Thanksgiving, and my mom and I were talking about things I make for the kids for lunch.  I always struggle with that meal, because my husband takes our dinner leftovers, and I don’t want to just feed them soup from a can. I have made quesadillas for lunch, and a few other things, but needed some more ideas.  We home school, and take care of a little three year old in our home, so lunch prep must be simple and fast.

My mom gave me this great idea for Tortilla Pizzas.  She makes them for my dad, and they take just minutes to make.  All you do is put all of the pizza fixins on a flour tortilla (gluten free or wheat can also be used), and bake.  I baked 2 of the pizzas today, but they didn’t turn out that great.  So the third one I put under the broiler, and it turned out perfect.  The tortilla was a bit crispy around the edges, and it was great.  I put pizza sauce, pepperoni, mozzarella cheese, and mushrooms on mine, and it was so yummy.  I used the huge fajita sized tortillas, and cut the pizza in half with my pizza slicer.  I was able to fold each half over when I ate it, and it was like a pizza sandwich.  It only took me a little over 10 minutes to make lunch for the 3 of us.  Here’s what mine looked like…

Those look really good! Another thing that's quick and fun for lunch is making sandwiches in a sandwich maker. I have one that I got years ago...it seals everything inside nicely and the outside gets nice and crispy. You can get them super cheap at this time of year.

What a great idea! Looks delicious! I'll have to try this. I was thinking you could even do these with ham & cheese or whatever. Mmmmmmm! Smiles, Cass
