Our Fried Rice Recipe…

My kids love fried rice, and since we don’t have the money to eat out right now, and I don’t like all of the additives in chinese food, I make ours at home. That way I can control what goes into it.

My kids like fried rice just plain.  They don’t like veggies, meat, or much else in it.  So this is what I do…

I cook 2-3 cups of minute rice (because it’s quick).  While the rice is cooking, I cook 3-4 eggs (that’s our protein).   I mix some seasonings with the eggs, like garlic salt, chicken bouillon, onion salt, and then I mix it all in with the rice.  I cook all of those ingredients together, and then just add a touch of some low-sodium soy sauce for color, and call it dinner.  I’m sure it would be much better if we could add chicken, bean sprouts, mixed veggies, etc. But my kids like things simple for lunch.

They told me it was the best they had ever had last week, so I’ll keep doing it!

That is an easy simple lunch... for Sam and I - Ry doesn't like rice.. he's missing out, huh?
